We hope you’re not fed up with pumpkin yet as we’re having another recipe for dessert lovers. After all, it’s weekend time and our children love homemade sweets.
Ingredients (12 muffins):
2 cups grated pumpkin
1 cup wheat flour
2/3 cups sugar
1 tsp vanilla sugar
freshly grated orange rind out of 1/2 orange
a few drops orange extract
50g walnuts
1 cup vegetable oil
2 tsp baking powder
1 tsp baking soda
3 tsp cinnamon
Instructions:
Blend grated pumpkin with vegetable oil and orange rind until you get smooth mixture.
Pour the mixture into a large mixing bowl. Add sugar, vanilla sugar, cinnamon, orange extract and mix. Then add chopped walnuts.
Sift dry ingredients and add to the rest of the batter. Preheat the oven to 180 degrees C. Place muffin cups in the muffin pan. Fill the cups with the batter - fill each cup 2/3 full.
Bake for about 35 minutes (until wooden skewer comes out clean).
Leave on a wire rack to cool.
