When some people (not only kids) think about spinach they feel sick. We decided to combine green spinach with bananas and make some dessert out of it. Let’s begin muffin festival. Green revolution has started!
Ingredients:
3 bananas
120 ml vegetable oil
100g baby spinach
150 ml soy milk (vanilla)
1/2 tsp baking soda
1 tbsp lemon juice
300 g wheat flour
Instructions:
Put bananas (chopped), spinach and vegetable oil into the blender. Blend until you get a smooth mixture.
Ina separate bowl, combine soy ilk, baking soda and lemon juice. Mix well and add to spinach blended with banana. Mix and slowly add sifted flour.
Preheat the oven to 180 degrees C. Place muffin cups in the muffin pan. Fill the cups with the batter - fill each cup 2/3 full.
Bake for about 20-25 minutes (until wooden skewer comes out clean).
