Pumpkins are generally so big that when you buy them you need to have the idea for at least a few recipes to make out of it. We do not let our pumpkins be wasted. Halloween is ahead of us so here’s the recipe for chocolate pumpkin cookies, something that all chocolate fans would love.
Ingredients (about 16 large cookies):
1 cup grated pumpkin
0.5 cup vegetable oil
1 dark chocolate (100g) (or 2 tbsp cacao powder)
1.5 cup wheat flour (2 cups if cacao powder is used istead of chocolate)
a few drops of vanilla extract/ the seeds out of vanilla pod
freshly grated orange rind out of 1/2 orange
100g sugar
pinch of salt
1/2 tsp baking soda
1 tsp baking powder
1 tsp vanilla sugar
Instructions:
Blend grated pumpkin with vegetable oil until you get smooth mixture. Put blended pumpkin into the mixing bowl, add sugar, vanilla sugar, vanilla extract and mix for about 2-3 minutes with a stand/hand mixer. Melt the chocolate using the hot water bath. Add it to the pumpkin mixture. Add orange rind and keep mixing. Sift dry ingredients and add to the rest of the dough. Knead the dough. Take small portions of the dough and make balls out of them. Flatten each bowl with your palm. Lay the cookies on a baking pan covered with baking sheet. Preheat the oven t 180 degrees C. Bake the cookies for about 12-15 minutes.
Leave on a wire rack to cool. Enjoy!
