PLUM PIE


The last days of plum season in Poland. So let’s make some dessert with plums for the end of the week and beginning of the weekend. Plum pie - delicious, sweet, a bit sour and so easy to make.







Ingredients:

150 ml vegetable oil
100g sugar
2 tablespoons ground flaxseed + 6 tablespoons hot water
100 g wheat flour
40g vanilla pudding
a few drops of almond extract
1 tbsp baking powder
5 large plums
powdered sugar


Instructions:

In a mixing bowl, combine flaxseed meal with sugar. Add hot water and mix until all the ingredients are combines and the mixture is smooth. 


While mixing, slowly add oil. Then add vanilla pudding, sifted flour and baking powder. When the ingredients are combined, add some almond extract and mix again. The batter should be quite thick.


Place the batter into the rectangle cake tin covered with baking paper.

Cut the plums into halves and remove the seeds. Then put the plums on top of the cake skin side down and press the plums gently. You can sprinkle the plums with some sugar.


Preheat the oven to 180 degrees C. Bake the cake for about 40-45 minutes (until skewer inserted in center comes out clean). 


Cool and sprinkle powdered sugar on top.
