Olé! It’s time for Mexican food in vegan version - quesadilla! It’s spicy, full of tomatoes and other veggies that your guests will love.
Ingredients (serves 2)
3 soft tortilla wraps
2 carrots
1 red bell pepper
1/2 green bell pepper
1/2 onion
2/3-1 tin of chopped tomatoes
5-6 tbsp red bean (canned or cooked)
4 tbsp corn (canned or cooked)
1/2 chili pepper
1 tsp Mexican seasoning mix
salt
pinch of dried garlic
fresh parsley
1-2 tbsp olive oil
Instructions:
Cut the carrots into half slices. Dice the bell peppers and onion. Heat the olive oil on a frying pan and add onion, chili pepper, carrots and bell pepper. Stir fry for about 4-5 minutes.
Then add the beans, corn and tomatoes and mix well. Add the spices and top with chopped parsley leaves. Cook over low heat for about 5 minutes. Place one tortilla on the pan, pour some sauce over it
and cover it with another tortilla. Pour the remaining sauce over the second tortilla. Cover it with the third tortilla.
Preheat the oven to 180 degrees C. Bake the quesadilla for about 15-20 minutes. Serve with favorite salad.
