We often convince our kids to try new flavors and desserts which are sweet but healthier than the ones you can buy at any shop. Here’s the recipe for a pudding - it’s plant based and sweet only thanks to agave syrup and fresh fruit. It’s delicious, creamy, full of fresh fruit and 100% vegan.
Ingredients (serves 1):
1 cup plant based milk
1 cup rice flakes
1 tsp agar-agar powder
1 tbsp agave syrup
Raspberry sauce:
3 tbsp raspberries
agave syrup (the amounts depends on your preferences)
Raspberry sauce:
50g blueberries
agave syrup (the amounts depends on your preferences)
Additionally:
fresh fruit (mango, blueberries, raspberries)/ almond flakes/ nuts
Instructions:
Bring the milk to a boil. Add rice flakes to the boiling milk and agar and cook for about 2 minutes, stirring from time to time. Leave the flakes to cool for a while. Then add agave syrup and blend to get a smooth mixture. Blend blueberries with agave syrup and pour it into a glass/ serving dish.
Put fresh veggies on top
and cover with rice pudding. Then put fresh fruit on top of the pudding and pour the raspberry sauce on top (raspberries blended with agave syrup). Decorate with fresh fruit and almond flakes. Enjoy!
