This recipe came into being when we visited vegetarian/vegan restaurant for the very first time many years ago (one of the first in Poland). We decided to make similar goulash that was served to us at that place. It’s full of veggies, soy protein and spices. It will provide you with lots of energy for the day.
Ingredients (serves 4-6):
100g soy steaks
1 onion
1/2 red bell pepper
1/2 green bell pepper
1 carrot
leek
handful of yellow string beans
1 corn
1/2 chili pepper
2 tbsp olive oil
1/2 tin of chopped tomatoes
1 bay leaf
2 allspice berries
5-6 black pepper grains
3 tsp Mexican seasoning mix
1/2 tsp dried garlic (or a clove of fresh garlic)
salt
2-3 tbsp olive oil
fresh parsley
Instructions:
Cover the soy steaks with water and cook over low heat until they’re soft. Drain the steaks, cut them into cubes, add 2 tsp Mexican seasoning mix and dried garlic. Mix well and leave for a few minutes.
Dice the onion, cut the carrot into half-slices, chop the leek and chili pepper finely. Cut the bell pepper into cubes. Cut the corn off the cob. Cut string beans into halves. Heat the olive oil on a frying pan and add onion, carrot and chili pepper. Fry for 2-3 minutes while tossing. Then add soy steaks, leek and onion. Mix well and fry for 3-4 minutes. Season with some salt.
Add string beans and corn. Add about 1.5 cup of water, tinned tomatoes and spices.
Mix everything, cover and cook over low heat for about 10-15 minutes, stirring occasionally. Sprinkle with chopped parsley leaves.
Serve with rice, groats and salad, e.g. carrot and apple salad. Enjoy!
