GRILLED POLENTA WITH VEGGIES


Italian cuisine. Since we love Italian food, here’s he recipe for polenta. It’s gluten free, with lots of veggies and herbs. Perfect for lunch or dinner. You can also have it in your lunchbox.





Ingredients (serves 4)

1 cup cornmeal
3 cups water
salt
black pepper
1/2 chili pepper
1 leek
1/2 red bell pepper
1/2 green bell pepper
handful of fresh oregano
pinch of dried garlic
olive oil


Instructions:

Chop chili pepper and oregano finely. Slice the leek and cut the peppers into smaller parts.


Heat the olive oil and add leek, chili pepper and bell peppers. Fry for 2 minutes while tossing.


Fill the cooking pot with water (adding some salt), cover with a lid and bring it up to boil. Gradually whisk in the cornmeal to prevent lumps. Cook over low heat for about. Stir it every few minutes.


After 10 minutes add fried veggies, oregano the spices. Mix well and cook again for about 10-15 minutes while stirring. 


Pour the polenta onto the tart pan. 


Leave to cool and then put into the fridge for at least 1 hour. Then, cut the polenta into triangles 


and grill it on a frying pan/ oven until golden brown. Serve with grilled veggies, salad or/and tomato sauce. Enjoy!
