GOOSEBERRY CAKE


Gooseberry - fruit which is a bit acidic and bitter in taste. This recipe will make it more sweet. It’s the recipe for the cake that our guests fell in love with. Something different in the sweet vegan world.





Ingredients:


200ml vegetable oil
150g sugar
3 tbsp ground flaxseed + 12 tbsp hot water
200g wheat flour
100g grated almonds
2 tsp baking powder
grated rind of 1 orange
2 tbsp breadcrumbs
200g gooseberries
2 tbsp sugar on top of the cake


Instructions:

In a small bowl, add the flaxseed meal and water. Stir to combine. Place flaxseed mixture into the large mixing bowl, add sugar, orange grated rind, vegetable oil and mix well. Sift the measured flour and add to the batter. Add baking powder and almonds and mix well. Put the batter into a small springform pan covered with baking sheet. Sprinkle breadcrumbs over the top of the cake and put the gooseberries on it. Sprinkle 2 tbsp (or less) of sugar on top of the cake. Preheat the oven to 160 degrees C. Bake the cake for about 1h20-30minutes.
