It’s time for a cutlet. Vegan, gluten free and full of flavor. And the main ingredient will be the chickpea. If you are already bored with lentil or soy, check out the recipe for this plant based protein bomb.
Ingredients (serves 2-4):
400g canned chickpea
2 tbsp ground flaxseed meal
dried garlic (or fresh)
1/2 chili pepper
1/2 onion
1/2 teaspoon of turmeric
1/2 tsp baking soda
1/2 tsp nigella seeds
4 tbsp chickpea flour
fresh parsley
Instructions:
Drain chickpea and blend it. Chop chili pepper, onion and parsley finely. In a mixing bowl combine blended chickpea with flaxseed meal, baking soda, parsley, veggies, chickpea flour and spices. Mix well.
Shape small to medium sized round cutlets out of the cutlet mixture.
Fry the cutlets in the olive oil/vegetable oil, until golden brown on both sides.
Serve with baked potatoes, rice, wheat and/or salad.
