Today it’s time for Indian dessert which M. fell in love with after she came back from Woodstock Festival and started looking through Krishna Cook Book. Gajar Halwa is a carrot pudding. It’s full of aroma, flavors and sweet. And for such dessert, it’s worth having another workout!
Ingredients (serves 3)
500g carrots
1/4 tsp turmeric
4 tbsp almond flakes
3 tbsp raisins
250ml soy milk
4 tbsp coconut oil (not melted)
3 tbsp powdered sugar (or 4 if you prefer it more sweet)
Instructions:
Grate the carrots on the small holes of a box grater or using a food processor's grating attachment. Roast almond flakes on a frying pan.
Melt coconut oil in a pan. Add carrot and fry for about 10 minutes.
Then, add milk, turmeric, sugar, almond flakes and raisins. Mix well.
Cook for about 15 minutes until halwa becomes thick. Enjoy!
