CAULIFLOWER AND QUINOA CUTLETS


Another recipe for lunch with lots of plant based protein. And you do not have to eat legumes all the time to provide yourself with plant based protein. Try quinoa for a change. Plant based food does not have to be boring. Here’s the recipe for gluten free cauliflower and quinoa cutlets!





Ingredients (serves 4-6):


1/2 small cauliflower
100-150g dry quinoa
1/2 onion
1/2 chili pepper
fresh parsley
2 tbsp ground flaxseed meal
4 tbsp chickpea flour
2 tbsp potato flour
1/2 green bell pepper
1/2 tsp baking soda
salt
black pepper
dried garlic
1 tsp savory (chubritsa) seasoning
olive oil

Additionally:

sunflower seeds (gluten-free option) or breadcrumbs to coat each cutlet



Instructions:

Divide cauliflower into small florets and cook until soft. Rinse quinoa and cook it in salted water for about 15-20 minutes. Drain it and leave to cool. Chop onion, bell pepper, fresh parsley and chili pepper finely. Crush the cauliflower with a fork. Add quinoa, chopped veggies, spices and both flours. Mix well. Shape small to medium sized round cutlets out of the cutlet mixture. Coat each cutlet in sunflower seeds or breadcrumbs. 


Heat the oil in a frying pan and fry the cutlets on both sides.


Serve with favorite salad/ baked potatoes etc. Enjoy!
