CAULIFLOWER AND BEAN CURRY


Curry is one of our favorite Indian food. You can add almost anything to it to make it delicious. Here’s the recipe for cauliflower and bean curry full of plant based protein. Vegan power coming from vegan food!






Ingredients (serves 2 -3):


1 small cauliflower
2 carrots
1/2 onion
1 red bell pepper
1/2 chili pepper
handful of yellow string beans
6 small mushrooms
4 tbsp white bean (canned or cooked)
2 tsp curry powder
3 tbsp coconut milk
fresh parsley
salt
black pepper



Instructions:

Peel the onion and chop it together with chili pepper. Cut the peppers into smaller parts. Peel the carrots and cut them into half slices. Cut the ends off the yellow string beans and cut the string beans into smaller parts. Peel and slice the mushrooms. Divide cauliflower into small florets. Heat the olive oil on a frying pan and add onion, dried (fresh) garlic and chili pepper. Fry for 2-3 minutes while tossing.



Then add carrots and pepper and fry for another 2-3 minutes while tossing.


Add mushrooms and fry for about 2 minutes. Then add cauliflowers, yellow bean strings, white bean, mix well and fry for 2-3 minutes.

Pour about 1/3 cup of water over the veggies, add coconut milk and spices and cook over low heat for about 3-4 minutes. 


Sprinkle curry with chopped parsley leaves.
Serve with rice. Enjoy!
