Bulgur is one of our favorite wheat. You can make almost anything out of it. Here’s the recipe which combines bulgur with tofu and veggies and all is baked in a red pepper! It’s delicious and offers plenty of nutritional benefits. Feel the vegan power coming from vegan food!
Ingredients (serves 2)
2 large red peppers
3-4 small carrots
1/2 zucchini
1/2 onion
1/2 chili pepper
1/2 green/ yellow bell pepper
100g dry bulgur
90g tofu
dried garlic
fresh parsley
salt
black pepper
2 tsp curry powder
2 tbsp coconut milk
olive oil
Instructions:
Cook the bulgur in salted water (about 15 minutes). Drain it and leave to cool. Cut the pepper hats and remove the seeds and the heart. Salt the peppers and sprinkle each with some olive oil.
Peel the carrot, zucchini and onion. Cut the veggies into cubes. Cut the green/yellow bell pepper into smaller parts. Chop chili pepper and parsley leaves finely.
Heat the olive oil and add carrot, onion chili pepper and green/yellow bell pepper. Fry for 3 minutes while tossing.
Add some dried garlic and crumbled tofu. Fry for a while with the rest of the veggies.
Then add bulgur, curry powder, coconut milk. Season with some salt and pepper. Mix well. Sprinkle with parsley leaves and cook over low heat for about 3-4 minutes.
Fill each pepper with the bulgur mixture and cover them with the “hats” (cut off earlier).
Preheat the oven t 200 degrees C.
Bake the peppers for about 25-30 minutes. Serve with favorite salad. Enjoy!
