BLUEBERRY MUFFINS


Let the weekend begin! As always on Friday, the recipe for vegan dessert:) Here’s the recipe for blueberry muffins. Everybody loves them:) Check out the recipe. It would be a shame if you didn’t try it!




Ingredients (16-18 muffins):


500g wheat flour
150g sugar
1 tsp baking powder
3 tsp vanilla sugar
1/2 tsp baking soda
pinch of salt
2 tablespoons ground flaxseed + 6 tablespoons hot water
120ml vegetable oil
300 ml plant-based milk
200g blueberries
3 tbsp potato flour to coat blueberries


Instructions:

Wash blueberries and coat them in potato flour.

In a mixing bowl, add the flaxseed meal and water. Stir to combine. Add sugar, vanilla sugar, salt and start mixing. While mixing, slowly add milk and oil. Sift dry ingredients (flour, baking powder and soda) and add to the rest of the ingredients. Mix with a spoon. Now add the blueberries.


Preheat the oven to 180 degrees C. Place muffin cups in the muffin pan. Fill the cups with the batter - fill each cup 2/3 full. 


Bake for about 25 minutes (until wooden skewer comes out clean). Leave on a wire rack to cool.
