There’s no weekend without a good vegan dessert:) You can finally buy gooseberries at local markets in Poland so here’s the recipe for yeast cupcakes with gooseberries. Gooseberries are rich in iron, vitamin A, C and B1. As always don’t forget about your daily workout routine - take a walk, go jogging and then enjoy your cupcakes with no regrets;)
Ingredients (10 cupcakes):
125ml plant-based milk
25g fresh yeast
80g sugar
250-260g wheat flour
a few drops vanilla extract
3 tbsp coconut oil (melted)
100-150g gooseberries
a few tbsp sugar to sprinkle the cake
Instructions:
Dissolve the yeast in warm milk. Add sugar. Mix and leave to prove. Then add vanilla extract and sifted flour. Start kneading the dough. At the end add the coconut oil and knead the dough until it’s smooth and firm, and is no longer sticky. Cover it with a kitchen towel and leave to rise for about 1 h (or until it doubled its size).
Preheat the oven to 180 degrees C. Wash gooseberries and cut off the ends. Divide the dough into 10 even parts. Shape ball out of each part. Squash each ball with your fingers, place some a few gooseberries inside, sprinkle with some sugar.
Then cover each cupcake with the dough and place in a muffin cups in the muffin pan.
Bake for about 20 minutes, until golden brown.
Serve with icing sugar or glaze (icing sugar combined with hot water).
