VEGGIES SOUP WITH DUMPLINGS STUFFED WITH CARROT


There are some flavors that you always associate with your family home. For us veggie soup made of young veggies - carrot and snap peas is one of such flavors. How to replace the potatoes in soup? M. thought that our aunt’s recipe for carrot dumplings could be the best solution. However, we decided to add some Indian kick to these dumplings. Here’s the recipe for veggie soup with carrot dumplings. You will remember the taste of it for a long time.





Ingredients:

bunch of soup vegetables (parsley, celery, leek, carrots)
2 carrots
200g snap peas
5 peppercorns
2-3 l of water
salt
3 bay leaves
2 allspice grains


Dumplings:

Basic dough:

200g wheat flour
200 ml hot water
1.5 tbsp olive oil
pinch of salt

Stuffing:

3 carrots
1 onion
clove of garlic
salt
black pepper
1/4 teaspoon curry powder


Instructions:

Cut the soup veggies and carrots into small pieces, put them into a large pot and add water. Cut the snap peas into halves and add to the rest of the veggies. Add salt, peppercorns, allspice grains and bay leaves. Cook until the veggies are soft.



Dumplings’ dough:

Sift the measured flour into a mixing bowl. Add a pinch of salt and hot water. Slowly mix with a fork. Add olive oil and knead the dough until it is smooth and firm. Cover with a cloth and leave the dough for about 15-30 minutes to rest.



Stuffing:

Grate the carrots on the medium holes of a box grater or using a food processor's grating attachment. Put the carrots into the boiling, salted water and cook until the carrot is soft.


Chop the onion and garlic finely. Heat the olive oil on a frying pan. Add onion and garlic. Fry the onion and garlic until golden brown. Add the carrot. Season with some salt, black pepper and add curry powder. Mix and fry the veggies for a while.


Take part of your dough and roll it flat.


Cut the round shapes (with the use of e.g. a glass/ cookie cutter). Fill each dumpling with one teaspoon of carrot stuffing and pinch the end tightly.


Cook in salted water for about 3-4 minutes once they swim to the top.

Place 5 small dumplings on a soup plate and pour soup over them. Enjoy!
