VEGAN YEAST CAKE WITH BLUEBERRIES


Weekend time ... vegan dessert time! Here’s a simple recipe. You won’t have to spend a lot of time preparing it, especially when there’s such a wonderful weather outside. Yeast cake with blueberries! Perfect combination -of course 100% plant based.





Ingredients:

Basic dough:

400g wheat flour
100g sugar
150ml vegetable oil (coconut, sunflower or other with neutral taste)
150 ml soy milk


leaven:

20 g fresh yeast
50 ml hot water
1 tbsp sugar
3 tbsp flour

Stuffing:

1 cup blueberries
2-3 tbsp icing sugar
1/2 tsp cinnamon

Instructions:

Dissolve the yeast in 5 tablespoons of warm water. Add sugar and 3tbsp of flour. Mix well. Leave to froth.

When ready, sift the measured flour to the leaven. Add milk and sugar. Mix well. Start kneading the dough and slowly add oil. Continue kneading to get a smooth, firm dough which is no longer sticky. If necessary, add some flour. Shape dough into a ball and cover it with a kitchen towel.


Prepare the stuffing. Combine blueberries with sugar and cinnamon.


Divide the dough into 2 equal parts. Cover the baking pan with baking sheet. Roll one part of the dough and place on the baking pan. You can also spread the dough over the baking pan using your hands. Put the stuffing over the first layer of the dough. 


Cover it with the other part of the dough.


Preheat the oven to 180 degrees C. Bake the cake for about 20-25 minutes. Enjoy!
