Here’s a good vegan breakfast full of plant based protein! Yes, we sometimes have sweet breakfasts. Here’s the recipe for simple pancakes with homemade tofu cheesecake and cherries in syrup that can be easily made at home. Perfect breakfast for the beginning of the day!
Ingredients (for 2 large pancakes)
Batter:
100g wheat flour
15tbsp soy milk
pinch of baking powder
oil for frying
Stuffing:
90g natural tofu
1 banana
6 tbsp cherries in syrup (cherries cooked with sugar and some water)
6 tbsp soy milk
1 tsp icing sugar
Pour the soy milk into a mixing bowl. Start mixing the batter while slowly adding sifted flour and baking powder. Preheat the frying pan, sprinkle it with some olive oi. Ladle some batter into the pan, tilting the pan to move the mixture around for a thin and even layer. Fry the pancakes both sides.
Tofu “cottage cheese”:
Combine tofu, banana, soy milk and sugar.
Blend all the ingredients to get a smooth paste. Add the cherries. Mix well.
Cover each pancake with some tofu “cottage cheese”, fold in half, then in half again to form triangles. Enjoy!
