Is it possible to combine pizza with broad bean? Of course it is! When the broad bean season in Poland comes, M. start going crazy as broad bean is her favorite veggie ;) That’s how the recipe for this pizza came into being: vegan pizza with broad beans, garlic, chili pepper and refreshing salsa of tomato, basil and parsley. It’s a perfect combination for the fans of pizza and broad beans.
Ingredients (for 2 large pizzas)
250 g broad beans
1/3 chili pepper
clove of garlic
salt
1 tbsp olive oil
Salsa ingredients:
1 tomato
handful of basil
handful of fresh parsley
1 tbsp olive oil
pinch of salt
Sauce:
180g tomato puree
salt
1/3 tsp dried garlic
1/2 tsp sugar
handful of basil
100 ml water
Instructions:
Cook broad beans in boiling, salted water for about 5 minutes (until it gets soft). Then drain it in cold water and peel. Chop the chili pepper and garlic finely.
Preheat 1 tbsp of olive oil on a frying pan and add chili pepper with garlic. Fry for a few minutes and then add broad beans. Season with some salt, mix and fry for about 1 minute.
Sauce:
Put tomato puree and water to a small pot. Add sugar, garlic and salt. Cook while stirring occasionally. When the sauce reduces a bit, add basil. Stir and cook until the sauce is thick.
Salsa:
Chop the tomato Parsley and basil finely. Add the herbs with tomato, sprinkle it with olive oil and season with some salt. Mix well.
When pizza dough is ready, roll into a circle and place it on an oiled baking tray or baking sheet. Spread tomato sauce on top. Put broad beans and salsa on the sauce.
Preheat the oven to 220 degrees C. Bake pizza for about 10-12 minutes.
