Every year M. counts the days for the broad bean season in Poland to come. When it finally arrives, her kitchen turns into a real broad bean madness. That’s how this dish came into being. It’s easy to make, it’s full of flavor and plant-based protein: pasta with broad bean and chili pepper - number 1 of broad bean season 2016 :)
Ingredients (serves 2)
250 g broad beans
1 large clove of garlic
2 tbsp finely chopped dill
1/3 chili pepper
fresh juice of 1/2 lemon
1.5 tbsp olive oil
salt
150g favorite pasta
Instructions:
Chop garlic and chili pepper finely.
Cook broad beans in boiling, salted water for about 5 minutes.
When cooked, rinse the broad bean with cold water and peel.
Cook pasta as recommended on the bag.
Heat the olive oil on a frying pan. Add garlic and chili pepper. Mix everything. Add broad beans.
Fry for a while, while tossing. Add lemon juice and dill. Season with some salt. Fry for a while until broad beans turn golden brown. Then add cooked pasta and stir to combine. Enjoy!
