As promised here’s the first Indian dish changed from vegetarian into vegan. The recipe is based on the book M. bought at Krishna's Village of Peace at 22nd Woodstock Festival. We love these flavors - rich, full of aromas and unforgettable. Here’s the perfect combination - modified recipe for Nariyal chawal and our recipe for spicy green lentil dal. Sweet rice and spicy stew - delicious. Indian food at home - something we will be definitely coming back to.
Ingredients ( serves 3-4):
Nariyal chawal:
100g basmati rice
750 ml water
3 tsp sugar
1/4 tsp turmeric
3 tbsp of finely chopped pistachios
2 tbsp raisins
5 tbsp coconut shreds
Instructions:
Cover the rice with water and leave for at least 1 hour.
In a pot, boil water with turmeric and sugar. Add the rice to the boiling water and cook for about 5 minutes. Then add the remaining ingredients (coconut shreds, raisins and pistachios).
Lower the heat and cook for another 8-10 minutes until the rice is done.
Leave the pot with the rice for about 5 minutes to allow any remaining water to evaporate or be absorbed by the rice.
Green lentil dal:
150 g green lentil
1 tbsp yellow curry paste
1 zucchini
2 carrots
1 tin of chopped tomatoes
1 tsp sugar
salt
1/3 teaspoon garam masala
2 tbsp of chopped fresh parsley
1 tbsp coconut oil
Instructions:
Cook the lentil in salted water until it’s soft (about 20 minutes). Drain it off water.
Slice the carrots and zucchini. Melt coconut oil and curry paste on a large frying pan. Add carrots and zucchini and fry for about 2 minutes.
Then add lentil. Season with some salt. Stir fry for about 3-4 minutes.
Add the tomatoes and some sugar. Cook for about 3 minutes while mixing occasionally.
Sprinkle with some fresh parsley, mix and cook for another 2 minutes. That’s it, enjoy:)
