YEAST PANCAKES


It’s dinner time. Kids cannot wait and are getting their forks ready as we’re going to make yeast pancakes - vegan yeast pancakes! They’re delicious, served with icing sugar, homemade jam or some fruit. Get ready, do some workout and then enjoy the festival of pancakes for dinner!




Ingredients (serves 4)

500g wheat flour
2 tsp ground flaxseed meal
30g fresh yeast
pinch of salt
2 tbsp sugar
550-560ml plant-based milk
oil for frying


Instructions:

In a large mixing bowl dissolve the yeast and sugar in warm milk. Mix and leave to prove. Add sifted flour, pinch of salt and flaxseed meal. Mix all the ingredients thoroughly. Cover the batter and leave to prove for 1-1.5 hour (until it is double in bulk).


Add some oil on a frying pan and heat it. Using a spoon (dipped in hot water), pour the batter into the pan. Fry the pancakes on both sides until golden. 


Put the pancakes on a paper tower to remove excess oil. Serve with icing sugar, fruit, homemade jam. Enjoy!
