M.’s husband came back from his business trip with a small souvenir - Sarek. It’s a Swedish thin bread which is similar to tortillas, but it’s more delicate and lighter in its texture. So here’s the recipe for a light meal that you can easily have for lunch at work or prepare for your kids for school lunch. It’s nutritious, full of plantbased protein and fresh veggies.
Ingredients (4 wraps):
4 soft tortilla wraps or 4 pieces of Sarek bread
2 tomatoes
3 pickled cucumbers
a piece of red bell pepper
a handful of iceberg lettuce
8 radishes
Paste:
150g canned chickpea
6 tablespoons sunflower seeds
2 tablespoons of finely chopped fresh parsley
fresh juice of 1/2 lemon
salt
pinch of dried garlic
black pepper
1 tbsp olive oil
Instructions:
Slice the tomatoes, radishes and cucumbers. Cut the bell pepper into sticks. Tear the lettuce leaves into smaller parts.
Drain the chickpea and put into the blender. Roast sunflower seeds on a frying pan and add to chickpea. Add lemon juice, chopped parsley leaves and spices.
Blend until you get a smooth mixture.
Warm the tortillas/ Sarek bread in a skillet. Smear each tortilla/ Sarek bread with 1-2 tbsp of paste, add lettuce and veggies.
Roll it up.
