TOFU BALLS SERVED WITH RICE WITH VEGGIES


Dear Gentlemen, Dads, this recipe for vegan lunch is dedicated to you. If you still do not believe plant based food can be provide you with the energy, you need to try these tofu balls served with a good portion of rice. There’re veggies, there’s power!





Ingredients (12 tofu balls):


Tofu balls:

180g tofu
2 carrots
a piece of leek
2 tablespoons ground flaxseed + 5 tablespoons hot water
1/2 chili pepper
120-150 rolled oats
1 tsp turmeric (curcuma)
2 tsp curry powder
salt
black pepper
chives
vegetable oil/ olive oil for frying


Rice with veggies:

300g rice (e.g. wild rice)
1 zucchini
1 bell pepper
a piece of leek
1 tbsp olive oil
salt
black pepper
1 tsp dried oregano
2 tsp tomato puree


Instructions:


Tofu balls:

Grate carrots on the large holes of a box grater or using a food processor's grating attachment. Slice the leek, chop chili pepper and chives finely. In a mixing bowl mash tofu using a fork/ hands. Add carrot, leek, chili pepper and chives. In a separate bowl combine ground flaxseed with water. Add the flaxseed mixture to tofu and veggies. Season with spices, add rolled oats and mix well. Put the tofu balls mixture to the fridge for a few minutes. 


Form small balls (the size of a walnut) out of the tofu balls mixture.



Rice with veggies:

Put the rice to the boiling and salted water and cook for about 18 minutes. Peel and cut the zucchini into half cubes. Cut the bell pepper into cubes. Slice the leek. Heat the olive oil and add bell pepper. Fry for 2-3 minutes while tossing. Add zucchini and leek and stir fry for another 3 minutes. Add salt, black pepper, oregano and mix well. Add rice to the veggies, pour some water and add tomato puree. Mix everything and cook for about 2-3 minutes.

Fry the tofu balls on vegetable oil or olive oil and serve with rice.
