Today it’s International Children’s Day. Let’s show the kids that veggies can be delicious. Who doesn’t like spaghetti? Behind the recipe for our spaghetti there’s also a love story, and not only the love for cooking. When K. and her husband were students they fell in love with spaghetti served at a local restaurant. Unfortunately, when you’re a student you cannot always afford to eat out. So, B. (K.’s husband), recreated the recipe for the spaghetti they loved and this is how this recipe came into being. You need to try it and let your kids fall in love with plant based spaghetti!
Ingredients - sauce (serves 3-4):
1/2 red bell pepper
2-3 mushrooms
1/3 onion
8-10 green olives
1/2 fresh chili pepper (optional)
1 tin of chopped tomatoes
1 tbsp fresh basil
1/3 tbsp fresh oregano
pinch of sugar
pinch of dried garlic/ 1/2 clove of garlic
salt
1-2 tbsp olive oil
Additionally: spaghetti noodles (how much you need depends on how much you eat :))
Instructions:
Peel the mushrooms. Dice the onion, pepper and mushrooms. Slice the olives. Chop basil, oregano and chili pepper finely. Heat olive oil/ vegetable oil on a frying pan/saucepan and fry the onion until soft, while tossing. Add the mushrooms and fry for 2-3 minutes while tossing. Add bell pepper and chili pepper and fry for another 2-3 minutes, while tossing. Add tomatoes, olives and spices and cook over low heat for about 5-6 minutes.
Boil the noodles as recommended on the bag (7-8 minutes - al dente). Serve the noodles with the sauce on top. That’s it, enjoy:)
