RICE AND LENTIL MEATBALLS WITH YOUNG CABBAGE


You can already feel the spring at local vegetable and fruit markets. That’s why we decided to combine our favorite red lentil with rice and young cabbage with dill. Easy to make and delicious:)





Ingredients (Serves 4):
YOUNG CABBAGE WITH DILL
2/3 young cabbage
salt
7 black pepper grains
1 teaspoon coconut oil
bunch of dill
4 bay leaves


Chop the cabbage and put it into the boiling, salted water. Add pepper grains and bay leaves. Cook for about 10-15 minutes, until the cabbage is soft. Drain off the water.


Preheat the coconut oil on a frying pan. Add the cabbage, season with salt and pepper. Fry for a while. Then add chopped dill.


VEGAN MEATBALLS
200 g red lentil
100g rice
2 tablespoons ground flaxseed + 6 tablespoons hot water
salt
black pepper
1/2 teaspoon garam masala
handful of fresh parsley
1 tablespoon of coconut oil

Instructions: 

Cook the lentils and rice as recommended on the packages. Chop parsley finely. In a small bowl, add the flaxseed meal and water. Stir to combine.
Drain the lentils and combine it with rice in a mixing bowl. Add chopped parsley and season with spices. Add flaxseed mixture. Mix well.


From the mixture shape small balls the size of a walnut.


Fry the meatballs both sides until golden brown.
