POTATO PANCAKES


Do you know Moms who respect their kids’ choices?  We do. Our Mom has always respected our choices. Unfortunately she leaves far from us and we cannot have her potato pancakes too often so ... we need to make them ourselves :) Today the recipe for traditional potato pancakes made of new potatoes - just like our Mom used to make!





Ingredients (serves 2 -3):

8 new potatoes
spring onion
2 tbsp wheat flour
1 tbsp potato flour
salt
black pepper
olive oil/vegetable oil for frying

Instructions:
Grate the potatoes on the smallest holes of a box grater or using a food processor's grating attachment. Chop the onion finely and add to the potatoes. Combine potatoes and onion with both flours and spices. If necessary, remove excess water from the potatoes.


Heat olive oil/ vegetable oil on a frying pan and pour small portions of potato mixture on it. Fry it on both sides. Transfer to paper towels to drain any excess oil.


Serve with favorite toppings.
Some people love these pancakes with sugar or jam. We love them with a simple carrot and apple salad.
