OATMEAL COOKIES


Working woman is not afraid of any work! So roll up your sleeves and let’s make oatmeal cookies. They’re easy to make and delicious. Perfect for the weekend. Everybody loves them.





Ingredients (18-20 cookies):



500 g rolled oats
6 tablespoons coconut oil
1 tablespoon ground flaxseed + 5 tablespoons hot water
180 g sugar
1 teaspoon vanilla extract
250 g flour
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
4 tablespoons almond milk (or soy milk)
Instructions:
In a small bowl, add the flaxseed meal and water. Stir to combine. Put flaxseed mixture to the mixing bowl, add sugar and mix until you get smooth mixture.  While mixing, add coconut oil. Add vanilla extract, salt and milk and mix again. Add rolled oats and mix with a  spoon.  Sift dry ingredients (flour, baking powder and soda) and add to the rest of the ingredients. Mix with a spoon or your hands.


From the mixture shape small balls the size of a walnut. Then flatten each ball in the palm of your hand into a circle. Lay the cookies on a baking pan covered with baking sheet.


Preheat the oven to 180 degrees C. Bake the cookies for about 20 minutes. 


Leave on a wire rack to cool. You can store the cookies in a closed jar for a few days.
