MILLET PANCAKES

There’s more time for cooking on the weekends. Forget about sandwiches this time. Millet pancakes are coming and they are going to be served with local strawberries that are finally here. However, you need to remember that millet flour is not the typical kind of flour and it can impart a bitter flavor. That’s how millet food sometimes works. But don’t you worry. As long as you serve these pancakes with fresh fruit and maple syrup they’ll be amazing and delicious:)






Ingredients:

350 g millet flour
2 tsp almond flour
2 tsp ground flaxseed meal
300 ml plant-based milk
2 tbsp sugar
1 tsp baking powder
1 tsp coconut oil
seeds out of 1 vanilla pod/vanilla extract

Instructions:
Combine sugar with milk and coconut milk. Add the seeds out of vanilla pod/vanilla extract. Sift millet flour, almond flour and baking powder to the bowl with milk. Add flaxseed meal and mix well.

Pour batter into a hot pan and fry it on both sides. Serve with favorite fruit, maple syrup or icing sugar.
