GLUTEN FREE VEGAN RICE WAFFLES

Today it’s a special day - Mother’s Day. So we also have a special recipe for all Moms - vegan gluten free waffles! Let this day be unforgettable. Go vegan ;)





Ingredients (6 waffles):



2 tablespoons ground flaxseed + 5 tablespoons hot water
300 ml plant-based milk
200ml sparkling water
2 tbsp sugar
2 tbsp coconut oil
350g rice flour
100g tapioca flour
1 tsp baking powder
pinch of salt
a few drops of vanilla extract/ the seeds out of vanilla pod

Instructions:

In a small bowl, add the flaxseed meal and water. Stir to combine. Pour flaxseed mixture into a mixing bowl, add sugar, coconut oil and mix everything until the mixture is smooth. Add sparkling water, milk and vanilla extracts/ vanilla seeds. Mix again. Sift the measured flours and add to the batter. Add baking powder and salt and mix well. The batter should have a texture of thin pancake batter.

Spread the waffle iron with some oil and preheat it. Cook for 3-4 minutes, until golden brown.


Serve hot with your favorite topping, e.g.: whipped coconut cream, fruit or icing sugar.
