You don’t have to eat traditional pasta all the time. Today our recipe for vegetable pasta with amazing spicy peanut and coconut dressing. Perfect for dinner. Don’t forget about fresh veggies that go perfectly with it:)
Ingredients (serves 3):
2 zucchinis
3 tablespoons peanut butter
1 tablespoon olive oil
1/2 chili pepper
salt
3 tablespoons coconut milk
handful of rocket
10 pistachios (chopped)
Instructions:
Shave zucchinis into ribbons, using a vegetable peeler.
Bring a large saucepan of water with salt to the boil. Put zucchini into the boiling water for 30-40 seconds and then drain well.
Dressing:
Heat olive oil on a frying pan, add chili pepper and fry for 1-2 minutes. Add peanut butter, coconut milk and salt. Cook on small heat for a while.
Serve zucchini ribbons with the dressing and rocket. Top with chopped pistachios.
