Today we’re celebrating the Chocolate Day. So we need to present you today with the recipe for vegan chocolate alternative. Easy to make and full of chocolate flavor. But vegan chocolate does not mean low in calories. So remember about your daily workout :)
Ingredients:
100 ml coconut oil (melted)
10 dried dates
3 tablespoons carob powder
2 tablespoons almond flakes
3 tablespoons dried cranberries
Instructions:
Soak the dates and cranberries in hot water in separate bowls. Leave for at least 15 minutes until they’re soft.
Melt coconut oil in a pan. When coconut is melted, add carob. Stir to avoid making lumps. Leave it to cool for a while.
Take the dates out of the water and peel them. Chop them finely. Take the cranberries out of the water and chop finely (it’s not necessary if chopped dried cranberries are used).
Blend coconut oil with carob and dates in a blender to get a smooth mixture. Coconut oil may liquify and separate from the rest of the mixture a bit. Add cranberries and almond flakes to the mixture. Mix slowly with a spoon.
Pour the mixture into the silicone molds. We used silicone heart molds and poured the mixture to each to form a 1.5 cm-thick layer.
