SALAD WITH PINTO BEAN, SUNDRIED TOMATOES AND CRANBERRIES


There’s never enough salads. When making a salad, don’t forget about adding some protein. Today the recipe for salad with pinto bean, sundried tomatoes and cranberries. It’s perfect for lunch or dinner. Nutritious and filling.





Ingredients (serves 2)

2 handfuls of favorite lettuce mix
6 sundried tomatoes in oil
1.5 tablespoon sundried tomato oil
2 tablespoons dried cranberries
1/2 cucumber
1 tomato
4 tablespoons pinto bean
salt
black pepper
1.5 tablespoons lemon juice
Instructions:
Place sundried tomatoes together with 1.5 sundried tomato oil in a small bowl. Soak cranberries in hot water in a separate bowl. Leave for at least 15 minutes. Then, take the cranberries out of the water and add to sundried tomatoes. Mix cranberries with sundried tomatoes and oil.
Wash the lettuce mix and place it in a bowl. Add pinto bean. Cut the cucumber into slices, and tomato into quarters. Cut sundried tomatoes into halves. Add sundried tomatoes, cucumber and fresh tomato to the lettuce mix. Take the cranberries out of the oil and add to the rest of the salad. Add lemon juice. Season with salt and pepper. Mix everything.
