POLISH PIEROGI (DUMPLINGS) WITH BLUEBERRIES


It’s time to do some hard work in the kitchen:) Our beloved pierogi (traditional Polish dumplings) filled with fruit. Our kids cannot resist them. Our freezers are filled with blueberries from our Mum so let’s use them! Get ready and start making dumplings filled with blueberries!






Ingredients (for about 30 small dumplings):
BASIC DOUGH:
400 g wheat flour
400 ml hot water
2 tablespoons olive oil
pinch of salt
Filling:
250 ml blueberries
2 tablespoons vanilla sugar
Instructions:
Sift the flour to a large mixing bowl. Boil the water. When the water is boiled leave it for 2-3 minutes and then add it to the flour while stirring with a fork. Add olive oil and salt. Knead the dough. Be careful as the dough is quite hot. The dough should be smooth and soft.
Cover the dough with a kitchen towel and leave for 15 minutes to rest.
In a seperate bowl, add sugar to blueberries and mix well.

Take part of your dough and roll it flat. Cut the round shapes (with the use of e.g. a glass/ cookie cutter). Fill each dumpling with one teaspoon of blueberry filling and pinch the end tightly.

Cook in salted water for about 4-5 minutes once they swim to the top.

Serve with coconut milk, cinnamon, sugar or fresh fruit.
