HALWA (SEMOLINA PUDDING)

Years go by, and fortunately some dreams do come true. It has finally happened.  The younger of 2VegeLovers sisters made her dream come true and went to Woodstock Festival in Poland. She fell in love with a dessert served at the Krishna Village. It was halwa - semolina pudding. Traditional, vegetarian sweet dish made in India. To make it vegan, we modified it a bit, added some raisins and here it is:)If you wonder whether you’ll have the chance to have the vegan version of the pudding during Woodstock Festival, unfortunately we cannot promise you that.  However, you can always have vegan semolina pudding at home:)





Ingredients (serves 3)


250 ml water
6.5 tablespoons semolina
2 tablespoons agave syrup
2 tablespoons dried cranberries/ raisins
1 banana
2 teaspoons coconut oil
pinch of cinnamon
Instructions:
Bring a large saucepan of water to the boil. Add cranberries/raisins, banana and cinnamon. Cook until banana is soft and starts to fall apart. Add agave syrup. Mix everything. Slowly add semolina while stirring constantly. When semolina gets firm, add coconut oil. Keep stirring until the mixture becomes solid and the mixture comes off the walls of the pan easily.
