CRISPY BLUEBERRY COOKIES


Sunday is baking time! This time something for the kids and all the fans of crispy cookies - crispy blueberry cookies. Perfect for coffee and tea. They disappear quickly so watch out and remember about a long walk afterwards ;p





Ingredients (for about 20 large cookies):

300 g wheat flour
125 g potato flour
3 tablespoons ground flaxseed + 9 tablespoons hot water
1/2 teaspoon baking powder
125 g sugar
30 ml water
80 ml oil
4 - 5 tablespoons blueberries (frozen or fresh)
Instructions:
In a mixing bowl, add the flaxseed meal and water. Mix well. Add sugar and whisk until a uniform mixture is achieved. While whisking, add oil and water. Add blueberries and sift dry ingredients (flours and baking powder). Mix all the ingredients with a spoon first and then use your hands to knead the dough.


Preheat the oven to 180 degrees C.
Roll out the dough about 1 cm thick and cut into shapes with any cookie cutter. Lay the cookies on a baking pan covered with baking sheet.
Bake for 15 minutes.
