BULGUR WITH TOFU AND LEMON AND SPINACH DRESSING

The basis for our today’s recipe is one of our favorite grains. Bulgur - which has delicious, nutty flavor. We need to take care of our future mum and her baby now, so in our today’s recipe you will find green veggies and good source of plant based protein.  And if you work out, this is the recipe for you - vegan power food:)




Ingredients (serves 2):
8 tablespoons cooked bulgur wheat
4 tablespoons lemon juice
6 sundried tomatoes in olive oil
2 handfuls fresh spinach
100g natural tofu
salt
black pepper
1/2 teaspoon dried garlic
1 teaspoon coconut oil
2 tablespoons pumpkin seeds (roasted)
a piece of leek
Instructions:
Cook the bulgur wheat according to the package instructions.
Cut tomatoes and leek into thin slices.
Cut tofu into cubes.
Heat coconut oil on a frying pan. Add tomatoes and leek. Fry for a few minutes. Add spinach, tofu and spices. Mix and fry for 2-3 minutes. Add lemon juice. Cook on small heat for a while.
Roast pumpkin seeds on a separate frying pan.

Serve bulgur wheat with tofu and spinach and lemon dressing on top. Sprinkle with roasted pumpkin seeds.
