We have already had some Asian food this week. Now it’s time for European. Hungarian cuisine in vegan version - vegetable stew/ lecho. It goes perfectly with our beloved boiled potatoes and sour cabbage salad. After this lunch you can’t be hungry!
Ingredients (serves 4):
1 bell pepper
6 mushrooms
1 onion
1 small zucchini
a tin of chopped tomatoes
1 tablespoon olive oil
2 tablespoons tomato puree
1 teaspoon sugar
1 teaspoons dried oregano
1 teaspoon dried basil
1/2 teaspoon sweet pepper
1/2 teaspoon dried garlic
1 teaspoon of chili powder (optional)
salt
black pepper
fresh parsley
Instructions:
Peel and slice the mushrooms and zucchini. Chop the onion. Clean the bell pepper, remove the seeds and cut the pepper into sticks.
Heat the olive oil on a frying pan and add bell pepper. Fry while stirring continuously. Add onion and fry till golden. When the bell pepper is soft, add zucchini.
Mix everything and fry for 3-4 minutes while tossing. Then, add mushrooms. Fry for another 2-3 minutes and add tomatoes, tomato puree, sugar and spices. Mix everything, cover and cook over low heat for about 8-10 minutes, stirring occasionally.
Serve with rice, groats or boiled potatoes.
