VEGAN GLUTEN-FREE OMELET


Ladies and gentlemen, it’s time for breakfast. Today it’s Women’s Day, so we won’t complain if we get some breakfast in bed. It’s time for omelet - vegan and gluten free, served with fresh veggies. Such breakfast makes your day.




Ingredients (serves 2)
200 g chickpea flour
200 ml water
salt
black pepper
1 teaspoon turmeric (curcuma)
2 teaspoons flaxseed meal
1 teaspoon curry powder
1/2 teaspoon sweet pepper
1/2 teaspoon baking powder
1 tablespoon olive oil/vegetable oil
chives
cherry tomatoes
1/2 chili pepper
1/2 bell pepper
(or any other vegetables you like)
Instructions:
Sieve the flour and baking powder into the mixing bowl.  Add salt, flaxseed meal and spices. Whisk together and slowly add water. The chickpea batter should be a little bit thicker than typical pancake batter. In the meantime prepare the veggies: chop the chives, cut tomatoes into halves and bell pepper into sticks. Add the veggies to the batter and mix.
Heat the olive oil on a frying pan and fry the omelet golden brown both sides.
Serve with fresh veggies.
