It’s time for our another tribute to American food. Yes, vegan can turn any food into plant-based miracles :D Let’s try American pancakes for breakfast this time, which are a bit different from our Polish traditional pancakes. Grab some maple syrup and get ready to cooking:)
Ingredients ( makes 10-12 pancakes):
400 g wheat flour
2 tablespoons ground flaxseed + 5 tablespoons hot water
370-380ml plant-based milk (e.g. almond milk)
4 tablespoons coconut oil
3 teaspoons baking powder
3 tablespoons sugar
pinch of salt
Instructions:
In a small bowl, add the flaxseed meal and water. Stir to combine. Pour flaxseed mixture into a mixing bowl, add sugar and mix everything until the mixture is smooth. Gradually add coconut oil and keep mixing. Add milk, salt and mix again. Sift dry ingredients (flour and baking powder) and add to the batter. Mix all the ingredients with a spoon or spatula.
Pour batter into a hot pan and fry it on both sides. Serve with favorite fruit, icing sugar or maple syrup.
