SOUR CUCUMBER SOUP


Soups are an important part of Polish cuisine. They also have a sentimental connection as they remind us of early childhood and one of the best soups - sour cucumber soup.




Ingredients (serves 4)
1l water
1 bay leaf
2 allspice berries
5 black pepper grains
6 potatoes
2 carrots
1 parsnip
1/2 small celery root
1/2 small leek
6-8 sour dill pickles in brine
180ml pickle brine
1 tablespoon olive oil
salt
black pepper
Instructions:
Add bay leaf, black pepper and allspice grains to water boiled in a pot. Peel the veggies. Cut the potatoes into cubes. Grate carrot, celery and parsnip on the large holes of a box grater or using a food processor's grating attachment. Slice the leek.  Add grated veggies and leek into the pot and cook for about 8 minutes. Grate cucumbers on the large holes of a box grater. Add cucumbers, the pickle brine and potatoes to the pot. Add olive oil and cook over medium-low heat until potatoes are soft. Season with salt and pepper to taste. Serve with chopped dill or parsley leaves.
