SCRAMBLED TOFU WITH VEGGIES



Do eggs dominate your breakfast table? Let’s change it - today our vegan version of traditional scrambled eggs. Scrambled tofu with fresh veggies and aromatic spices. This recipe will bring you to the knees:)






Ingredients (serves 2):


180g natural tofu
1/2 teaspoon curry powder
1/2 teaspoon of turmeric
chives finely chopped
1/2 red bell pepper
1/2 chili pepper
1/2 sweet pepper powder
salt
black pepper
1 tablespoon olive oil
optional:
pea sprouts
broccoli sprouts
spinach
(or any other vegetables you like)

Instructions:

Use a fork or your hands to crumble tofu into bite-sized pieces. Heat olive oil in the frying pan and stir fry bell pepper and chili (about 1-2 minutes). Add crumbled tofu and mix well. Add spices and fry for a moment while stirring continuously. Sprinkle with chopped chives and sprouts. Serve with fresh veggies.
