Pizza Day was yesterday so we want to present our ideas for pizzas - vegetarian and vegan. What would life be without pizza?:) It’s time for meatless pizzas.Which one do you prefer?
VEGETARIAN PIZZA
Ingredients (for 2 large pizzas)
Pizza dough:
2 glasses of flour
10 g fresh yeast
1/4 glass warm water
5 tablespoons olive oil
1/2 teaspoon sugar
1/2 teaspoon salt
Sauce:
half a tin of chopped tomatoes
2 sun dried tomatoes in olive oil
fresh basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon dried garlic or 1/2 clove of fresh garlic (why dried and not fresh garlic preferable? that is what you will read on our blog soon;))
Topping:
1 red pepper
onion
25 dag grated mozzarella with vegetarian rennet (vegans can skip cheese or add any vegan cheese)
hot chili pepper (optional)
or any other vegetables you like (this version of pizza is eaten by our kids)
Instructions:
Dissolve the yeast in 5 tablespoons of warm water. Add sugar and a tablespoon of flour. Mix and leave to froth.
In the meantime prepare the sauce. Put tomatoes into a pot. Add salt and sugar and stew under a lid on a medium heat for about 5 minutes. Add chopped sun dried tomatoes, basil, oregano and garlic and cook for another 3 minutes. Allow the sauce to cool.
Sift the measured flour into a mixing bowl. Add leaven, olive oil, salt and half of measured warm water. Mix everything and knead for a few minutes, slowly adding water. If necessary add more water (depends on the type of flour used). Continue kneading to get a smooth, firm dough which is no longer sticky. Shape dough into a ball and cover it with a kitchen towel. This recipe does not require leaving the dough to rise for long. 10-15 minutes is enough.
Cut the pepper into slices and chop the onion. Stretch pizza dough with your fingers on an oiled baking tray or baking sheet. Spread tomato sauce on top, sprinkle with mozzarella and cover with favorite vegetables. Preheat the oven on convention mode at 220 degrees. Put pizzas in the oven for 9-13 minutes. If you bake your pizza on a stone, 10 minutes is enough.
VEGAN PIZZA WITH TOMATO SAUCE, MARINATED TOFU, GRILLED VEGETABLES AND OLIVES
Ingredients (for 2 large pizzas)
Pizza dough:
2 glasses of flour
10 g fresh yeast
1/4 glass warm water
5 tablespoons olive oil
1/2 teaspoon sugar
1/2 teaspoon salt
Sauce:
360g tomato puree
50 ml water
pinch of salt
pinch of sugar
handful of fresh basil or 2 teaspoons dried basil
1 teaspoon dried thyme
2 teaspoons dried oregano
pinch of freshly ground black pepper
clove of garlic or a pinch of granulated garlic
Topping:
2 carrots
1 small zucchini
green olives - 4 tablespoons
180g natural tofu
soy sauce
a slice of fresh ginger
1 tablespoon of agave syrup (or honey if not vegan)
olive oil spray or a tablespoon of olive oil
salt
Instructions:
Dissolve the yeast in 5 tablespoons of warm water. Add sugar and a tablespoon of flour. Mix and leave to froth.
In the meantime, pour 5 tablespoons of soy sauce in a separate bowl, add squeezed or grated ginger (using the smallest holes possible) and a tablespoon of agave syrup. Mix everything and add tofu cut into slices of about 1cm. Leave tofu in the marinade for about 15-30 minutes.
Peel the carrots and by using the vegetable peeler shave carrots into thin ribbons. Repeat the same step for zucchini - don’t remove the zucchini's skin. Put the carrot and zucchini ribbons on a baking tray.
Spray the vegetables with olive oil and add some salt. Mix everything. Place marinated tofu next to vegetable ribbons. Heat the oven to 180 degrees (grill mode) and grill vegetables with tofu for 5-6 minutes.

Sauce:
Place tomato puree in a small pot. Add water, spices and cook for a few minutes. Stir the sauce as it comes to a boil and cook until it reduces.
Shape dough into a ball again. Take half of the dough and roll into a circle (thick or thin - whatever you prefer) Remember that pizza dough also rises a bit in the oven.
Spread tomato sauce on top of each pizza, put grilled vegetables and tofu. Sprinkle with olives.
Preheat the oven on convention mode at 220 degrees. Put pizzas in the oven for 9-13 minutes.
