TOFU CHEESCAKE WITH STRAWBERRY SAUCE

You will always remember some tastes, regardless of being vegan or not. Personally, we do not miss any food than is similar in taste to meat. Since M. became vegan, she has sometimes missed dairy products, especially cheesecakes but then Tofu Cheesecake comes to the rescue :)  Today our recipe for sweet, gluten-free tofu cheesecake with strawberry sauce :) Yummy :)








Ingredients:

600 g natural tofu
4 tablespoons agave syrup
grated rind of 2 oranges
fresh juice of 1 orange
seeds out of 1 vanilla pod
4 tablespoons potato flour
4 tablespoons plant based milk
3 tablespoons icing sugar
3 tablespoons coconut oil
Sauce:
100 - 150 g strawberries (fresh or frozen)
4 tablespoons sugar
Crumble tofu into small bits into mixing bowl. Add agave syrup and blend.


Grate the rind of two oranges and use the juice of one. Add it into the mixing bowl.  Add vanilla, and slowly add potato flour.

Blend and add milk, icing sugar and coconut oil.

Blend everything until smooth. 

Preheat the oven to 180 degrees C. Put the batter into a springform pan covered with baking sheet. 

Bake for about 50 minutes, until golden. In the meantime, blend strawberries with sugar.
Leave the cheesecake to cool and top with strawberry sauce.
