Dinner ... light, healthy and nutrient-rich salad ...a dream come true after work out but also a delicious dinner for two;)Today’s choice - salad with rocket, sweet potato and chickpeas.
2 large handfuls of rocket
1/2 of medium sweet potato
2 medium carrots
4 tablespoons of chickpeas
5 cherry tomatoes
2 tablespoons of pomegranate seeds
1 tablespoon of olive oil
1/2 teaspoon of hot chili (optional)
Salt and pepper
Dressing:
2 tablespoon of olive oil
1 teaspoon of balsamic vinegar cream
1/2 teaspoon of white wine vinegar
1/2 teaspoon of honey/ agave syrup
Salt and pepper
Pre-heat oven to 200C. Place the rocket leaves on a plate. Put the sweet potato and carrot wedges (peeled) in the bowl and toss with the tablespoon of olive oil, salt and pepper (chili is optional). Mix and lay out on a baking sheet. Roast in the oven for approx. 30 minutes and when almost done add chickpeas, mix with potatoes and carrots and roast for a further 3-4 minutes. When the vegetables are done place them on the rocket leaves, add cherry tomatoes (sliced in half) and the pomegranate seeds. Pour on the dressing and toss. Enjoy!
