Are there any professional chefs out there who inspire you? We know a few and they are not always vegetarian/vegans. Today’s inspiration is the recipe of one of the most popular chefs in Poland, Karol Okrasa and our vegan version of his citrus salad -Citrus salad with marinated tofu.

(serves 2)
Ingredients:
handful of rocket
handful of favorite lettuce mix
bunch of spring onion
90 g natural tofu
1/2 grapefruit
1 orange
1/2 avocado
40 g roasted cashew nuts
2 tablespoons sesame seeds
Marinade for tofu:
4 tablespoons dry red wine
1/2 hot chili pepper finely chopped
1/2 teaspoon agave syrup / honey (if not vegan)
1 tablespoon olive oil
pinch of dried garlic
black pepper
Sauce:
1 tablespoon of agave syrup (or honey if not vegan)
1 tablespoon white wine vinegar
fresh juice of 1/3 lemon
3 tablespoons olive oil
fresh juice of 1/2 orange
fresh juice of 1/2 grapefruit
Instructions:
Cut tofu into slices/cubes. Mix all the marinade ingredients and pour it over tofu. Mix so that all of the tofu gets covered by the marinade. Cover and leave to marinate in the fridge for about 1 hour.
Cut orange and grapefruit supremes (orange slices devoid of membrane and pith). Squeeze the membranes to the bowl to get the juice. This juice will be used for the dressing.
Cut avocado into slices and finely chop spring onion.
Prepare the dressing: in a bowl mix agave syrup/ honey with white wine vinegar. Add lemon juice and salt and pepper. Slowly add grapefruit and orange juice, stirring constantly.
Take out marinated tofu from the fridge and top it with sesame seeds. Roast it on a frying pan until golden brown.
Put rocket leaves, lettuce mix on the plates. Add avocado, grapefruit and orange supremes and roasted tofu. Top with roasted cashew nuts and spring onion. Pour dressing over the salad.
