BAKED SAMOSAS

The recipe for pakora was yesterday. Are there any vegetables left? What to do with them? Don’t waste any food! Here’s the recipe for delicious baked samosas, traditional Indian food with a touch of Polish flavors. Delicious served hot and cold.

Baked samosas served with carrot and apple salad
Ingredients (serves 4):
  

         Samosa Dough :
4 tablespoons vegetable oil
130 ml warm water
    380 g flour
      pinch of salt
Filling:
2 carrots
4 potatoes
1/4 medium cauliflower
100 g shelled peas (fresh or frozen)
fresh parsley
2 teaspoons curry powder
salt and pepper
2 tablespoons of olive oil/vegetable oil
Sauce:
can of blended tomatoes
salt
1 teaspoon sweet pepper
1/2 teaspoon brown sugar
1 teaspoon curry powder
1 hot chili pepper finely chopped
Carrot and apple salad:
5 medium carrots
1 large apple
Juice of 1 freshly squeezed orange
1 tablespoon of olive oil
Pour the oil into a mixing bowl, add flour and salt. Slowly add water. Knead the dough until it’s smooth and firm, and is no longer sticky.
Meanwhile, prepare the sauce. Pour blended tomatoes into a saucepan, add the spices. We are the fans of chili so we add one red hot chili pepper finely chopped. Of course you can skip it. Cover and cook over low heat for about 5 minutes, stirring occasionally.
Cut potatoes and carrots into cubes, divide cauliflower into small florets. Finely chop fresh parsley.  In a pan heat the oil. Fry vegetables for a few minutes until golden, stirring continuously.  Add a little bit of water, peas and spices. Mix and cook over low heat until vegetables are soft. Sprinkle with parsley and leave to cool.
Meanwhile, prepare the salad.  Grant carrots and apple on the large holes of a box grater or using a food processor's grating attachment. Sprinkle with freshly squeezed orange juice and one tablespoon of olive oil. Mix everything.
Divide the dough into 10 balls. Flatten each of them with a rolling pin into a circle of approx. 15 cm in diameter. Take 1 tablespoon of the prepared filling and fold over like traditional Polish pierogi (dumplings).
Place onto the prepared baking tray and put into the hot oven (heated to 200 degrees C). Bake for 30-35 mins or till light golden. *
*Usually samosas are fried. However, we try to care about our health and chose a baking option which is lighter for the stomach. Even our meat-eating husbands and children love this version of samosas.
