Cauliflower used to be the worst veggie for us when we were kids:) And today it’s one of our favorite. Here’s another recipe for a soup that combines slightly spicy leek and cauliflower served with a little bit of coconut milk:)
Ingredients (serves 3-4): 1.5- 2 l vegetable stock 2 carrots 250 g sweet potato 120 g leek 230 g cauliflower 2 potatoes 2 tbsp coconut milk
Instructions:
Peel the carrots, potatoes and sweet potato. Cut the carrots into slices and potatoes and sweet potato into cubes. Chop the leek finely. Put the sweet potato and leek to the vegetable stock and cook until the veggies are soft. Blend the soup. Divide cauliflower into small florets. Add potatoes, carrots and cauliflower to blended soup, cover and cook over low heat until the potatoes are soft. At the end add coconut milk. Serve the soup with chopped parsley leaves. Enjoy!
