Ingredients (8 cutlets):
1/2 kg broad bean (cooked and peeled)
6 tbsp cooked millet
2 cloves garlic/ dried garlic
salt
black pepper
dill
1 spring onion
1/2 chili pepper
1 tbsp vegetable oil
2 tbsp corn flour
2 tbsp panko bread crumbs
oil for frying
Instructions:
Transfer broad bean to a bowl and crush it with a back of a fork. Add millet and mix. Chop garlic, onion and chili pepper finely. Heat the oil in a frying pan. Add onion, garlic and chili pepper and fry until the onion turns gold. Add the veggies to the cutlet mixture and mix. Add chopped dill, corn flour and season with some salt and pepper. Mix well. Shape medium sized round cutlets out of the cutlet mixture. Coat each cutlet in panko bread crumbs. Leave the cutlets in the fridge for about 30 minutes. Fry in the vegetable oil, until golden brown on both sides.
Serve with rice/ potatoes and fresh veggies. Enjoy!
